Almost every environmental monitor calculates VPD from air temperature. But the mechanism that drives transpiration is set at the leaf surface, and the leaf is rarely the same temperature as the air. A well-transpiring canopy with good airflow runs a few degrees cooler; under intense light or weak airflow the radiant load pushes the leaf warmer. Either way, the air number is reading a surface the plant isn't.
How much that matters depends on the size of the gap. In a well-mixed room under moderate light the leaf sits within a degree or two of air, so the correction is small. But a 4 to 5°F difference, common under strong light or right when the light drops off, moves the true VPD by roughly 0.2 to 0.4 kPa, enough to put you in a different zone than the air number claims. The gap itself is a signal too: it shows how hard the light is loading the canopy and whether transpiration is keeping up.
On top of all that... when the canopy and air temperature "switch," you are witnessing a metalobic shift in the plant. Interestingly, "amount of time transpiring" is a tool in our toolbox that we haven't yet explored as growers... yet.
